Ingredients
For making sauce
  • Lemon juice- 3 tbsp
  • Tomato Ketchup- 5 tbsp
  • Fish sauce- 3 tbsp
For making Pad Thai
  • Oil- 3 tbsp+ 2 tbsp
  • Chicken, cut small- 2 chicken thighs
  • Shrimp, shelled and de-veined- 10
  • Shallot or red onion, chopped finely- 1 large shallot or 1 medium red onion
  • Garlic, minced- 2 cloves
  • Ginger, minced- 2 inch slice
  • Thai red chili or Bird's eye chili, chopped- 3 (for less spice use 2)
  • Egg, large- 2 or 3
  • Rice Noodles, thin or thick- 1 packet
For Garnishing
  • Peanuts, chopped and toasted
  • Cilantro, chopped
  • Green onions, chopped
  • Bean Sprouts
  • Lemon wedges
Instructions
  1. Cook the rice noodles in boiling water till it turns soft, don't over cook it, drain the water, drizzle oil over it and combine well to prevent from sticking. Keep aside.
  2. Smash the peanuts and toast in a hot pan till golden in color. Keep aside.
  3. In a bowl, combine the ingredients for making sauce, keep aside.
  4. Place a wok or frying pan over high heat, let the pan turn hot.
  5. Add 3 tbsp oil into the hot pan or wok.
  6. Add the diced chicken, stir fry it for a couple of minutes.
  7. Add shrimp, stir fry over high heat till it has cooked.
  8. Since you are stir frying at high heat, it doesn't take too long for the chicken to cook.
  9. Keep aside the cooked chicken and shrimp.
  10. In the same wok or pan, add 2 tbsp oil.
  11. Add ginger, garlic, onion and thai red chilies, stir fry over high heat till light golden.
  12. I added 3 Thai red chilies, it was a bit spicy. If you prefer to be less spicy, add only 2 chilies.
  13. Crack the eggs and scramble the eggs, cook it.
  14. Add the sauce to the pan, saute for a minutes.
  15. Add ½ cup water to thin down the sauce, cook for 2 minutes.
  16. Add the cooked chicken and shrimp, stir fry it and combine with the sauce.
  17. Add the rice noodles, combine well and stir fry over high heat for a couple of minutes.
  18. Remove the pan from the heat.
  19. Serve the Pad Thai on a plate.
  20. Garnish with ½ tbsp toasted chopped peanuts, couple of pinches of cilantro, green onion, a few bean sprouts; place a couple of lemon wedges and Thai red chilies.
  21. Serve hot and enjoy this delicious Pad Thai.
Notes
Don't ignore Fish sauce while making the sauce.
Try to use Thai red chilies.
