Ingredients
  • All purpose flour- 2½ cups
  • Sugar- 1½ cups
  • Eggs- 2
  • Baking powder- 1 tbsp
  • Salt- ¾ tsp
  • Light olive oil or vegetable oil- 1¼ cups
  • Buttermilk- 1 cup
  • Vanilla extract- 1 tsp
  • Pink color- 4 tsp (or add more accordingly)
Instructions
  1. Preheat oven to 350 F.
  2. Line the cupcake pans with the cupcake liners, spray non-stick cooking spray on it. Keep aside.
  3. In a large bowl, combine the flour, sugar,baking powder and salt.
  4. In another bowl, combine buttermilk and oil together using a whisk.
  5. Slightly beat the eggs using a whisk and add to the flour mixture.
  6. Add the buttermilk and oil to the flour, combine well using an electric hand mixer on low speed for a few seconds.
  7. Add vanilla extract and pink color to the batter, combine well.
  8. Pour the batter into the cupcake liners, fill only ¾ th of the liner.
  9. Bake for 25 minutes or until a tooth pick inserted in the center of the cupcake comes out clean.
  10. Let the cupcakes cool down completely.
  11. If you prefer top the cupcakes with frosting.
