Roasted Red Pepper and Peanut Butter Sauce
 
 
Ingredients
To puree
  • Roasted red peppers, canned- 3, drained
  • Peanut butter- 3 tbsp
  • Soy sauce- 1 tbsp
  • Chili paste- 1 tsp (or add chili powder)
For cooking
  • Olive oil- 1 tbsp
  • Dried basil- 2 tsp
  • Salt- to taste
Instructions
  1. If using canned roasted red peppers, drain the liquid.
  2. In a blender puree the above mentioned ingredients to a smooth paste. Add some water to thin down the puree.
  3. Place a pan over medium heat, add olive oil.
  4. Pour the sauce into the pan, heat it up.
  5. Add dried basil, combine well, cook for a few seconds.
  6. Taste and add salt if needed.
  7. Serve as a dip, combine pasta in the sauce, add chicken or fish, there is a whole lot of things you can do with this sauce.
  8. I combined baked small potatoes with this sauce and cooked in it for sometime, tasted amazing, will post the recipe soon.
