Tuna Olives Cutlet
  • Tuna, canned- 2 cans
  • Onions, chopped small- 1, small
  • Pickled olives, chopped- ¼ cup, rinse under water and dry it
  • Spinach, chopped small- 1 cup
  • Corn starch- ¼ cup
  • All purpose flour- ¼ cup
  • Ground pepper- ½ tsp
  • Italian seasoning or other seasonings- 2 tsp
Other ingredients
  • Olive oil- to pan fry cutlets
  1. Combine all the above mentioned ingredients in a large bowl. If the mixture is too dry add little water so that you can make balls out of it.
  2. If using pickled olives don't add any extra salt as the olives impart the salt.
  3. Make small balls out of the tuna mixture and flatten it.
  4. Place a frying pan over medium heat, add olive oil 3-4 tbsp and pan fry the cutlets till it turns golden brown in color.
  5. Transfer to a kitchen paper towel.
  6. Sprinkle feta cheese over the pan fried cutlets and serve along with ketchup.
If adding regular olives, do add salt to the tuna mixture.
You could make sandwich with this or wrap it in a pita bread or serve over salads.
