Asian Cucumber Salad
 
 
Ingredients
  • Cucumber- 1, julienne it or cut into thin long strips that resembles to matchstick
For making sauce
  • Honey- 1 tbsp
  • Soy sauce, low-sodium- 2 tbsp
  • Dry red chili flakes- 1 tsp
  • Green onion, chopped very small- 2 tbsp
  • Cilantro chopped very small- 2 tbsp
  • Tamarind juice- 1 tbsp (1 inch slice fresh tamarind soaked in 1 tbsp warm water)
  • Salt- a few pinches
Instructions
  1. Julienne the cucumbers or cut into thin long strips.
  2. In a bowl, combine all the ingredients mentioned above for 'making the sauce'.
  3. Pour the sauce over the cucumber and combine well.
  4. Keep the salad covered for sometime so that the flavors from the sauce gets into the cucumber.
  5. Serve with spring rolls, cutlets etc.
Notes
This salad is little spicy, you can adjust it by adding less or more of the dry red chili flakes.
If you are using concentrated tamarind paste, use very less according to your needs.
