Spinach and Cheese Folded Omelette

Ingredients
  • Eggs- 2
  • Spinach, chopped- ¼ cup
  • Milk or cream- 2 tbsp
  • Ground pepper- 2 pinches
  • Salt- a few pinches
  • Cheddar cheese, grated- ¼ cup
  • Butter or Olive oil- ½ to 1 tbsp
Instructions
  1. In a small bowl: beat eggs, spinach, milk, ground pepper and salt using a whisk.
  2. Place a non-stick pan over medium heat.
  3. Add butter or olive oil.
  4. Pour the beaten eggs over the pan and cook for 3 minutes.
  5. Sprinkle cheese over the omelette and cook for 2 minutes.
  6. Once the cheese starts to melt, fold the omelette using a spatula.
  7. Gently flip it to the other side and cook over low heat for a couple more minutes.
  8. Slide the omelette to a plate and serve with toasted bread or bagels.
Notes
For a healthier version, use only egg whites.
