Chicken Pasta in Carrot Sauce – Carrot Chicken Pasta

Healthy and tasty one pot meal…

I’d been wanting to share this recipe for so long, this is one of my favorite one pot meals that can be made in less than 30 minutes. I cooked the carrots and made a sauce out of it. Combined the chicken and paste in the carrot sauce. It’s healthy, delicious and it’s filling.

Ingredients
  • Pasta- Fusilli or macaroni
For cooking chicken
  • Chicken breasts, chopped- 3 breasts
  • Ground pepper- 1 tsp
  • Salt- to taste
For making carrot sauce
  • Oil- 1 tbsp
  • Onions, chopped- 2
  • Carrot, diced- 3, large
  • Thai Red curry paste- 3 tbsp
  • Water-1½ cups
  • Ground pepper- 1 tsp
  • Hot sauce- 1 tsp or chili powder
  • Cilantro, chopped- 2 handful
  • Salt- to taste
Instructions
  1. In a saucepan, combine chicken along with ground pepper and salt, cook covered till chicken has cooked well. Keep aside.
  2. Cook the pasta in boiling water seasoned with salt, drain the water and keep aside the cooked pasta.
  3. Place a large pan over medium heat, add oil.
  4. Add onions, a few pinches of salt, cook till translucent.
  5. Add diced carrots and cook till it turns tender.
  6. Add Thai red curry paste, saute for a few minutes.
  7. Transfer the cooked onions and carrots to a blender, add water and puree to a smooth paste.
  8. Return to the pan, add the cooked chicken to the sauce.
  9. Add ground pepper and hot sauce or chili powder, cook for a few minutes.
  10. Add the cooked pasta, combine well.
  11. If the sauce is too thick add water to thin it down.
  12. Taste and add more salt if needed.
  13. Add cilantro and cook for a couple of minutes.
  14. Serve in a plate and enjoy.
