Cabbage Scrambled Eggs Stir Fry- Kerala Style Egg Cabbage Thoran

One of my favorite ways to make cabbage, is stir-fried with scrambled eggs…

I only make a few dishes with cabbage: Kerala-style thoran or stir fry with coconut, add grated cabbage to noodles and this cabbage with scrambled eggs, I like to flavor up the bland cabbage by adding eggs to it. This is one dish that I make whenever I have cabbage in my refrigerator. This can be served as a side dish with rice or can be wrapped in chapati, tortilla, or roti.

Easy Egg Cabbage Stir Fry

Ingredients
To grind
  • Grated coconut- 1 cup
  • Garlic- 1 large clove
  • Cumin seeds- 1 tsp
  • Turmeric powder- ¼ tsp
  • Water- ¼ cup
For cooking
  • Oil- 2 tbsp
  • Mustard seeds- 2 tsp
  • Dried red chilies, halved- 2
  • Curry leaves- 1 sprig
  • Onion, chopped- 1
  • Green chilies, halved- 1 or 2
  • Cabbage, shredded- ½ of a medium cabbage
  • Water- ¼ cup
  • Eggs, beaten- 1 or 2
  • Salt- 1½ tsp
Instructions
  1. In a blender, grind the above-mentioned ingredients to a coarse paste. Keep it aside.
  2. It's good to shred the cabbage in a food processor, will be even, cooks faster & looks good.
  3. Place a pan over medium heat, add oil and let turn hot.
  4. Add mustard seeds, let splutter.
  5. Add halved dried red chilies & curry leaves, saute for a few seconds.
  6. Add onions, green chilies and 1 tsp salt; saute till onions turn translucent.
  7. Add cabbage, combine well & add ¼ cup water, cook covered till cabbage has turned soft.
  8. Open the lid and add the ground coconut.
  9. Stir fry over high heat for a few minutes till the cabbage and coconut starts to turn golden brown.
  10. Slide the cabbage stir fry to one side of the pan to create some space.
  11. You can either beat the eggs well using a fork taken in a bowl or crack the eggs directly into the pan.
  12. Add the eggs & scramble the eggs.
  13. Add ½ tsp more salt, combine with the cabbage & stir fry for a couple of minutes.
  14. Serve in a bowl.
  15. Enjoy as a side dish with rice, or wrap it in chapati, tortilla, rotis etc. Tastes delicious.
