Well, there were barely enough fries for my husband when he got home from work because I’d “taste tested” a bit too much….I’m making them again momentarily, as they were a big hit with hubby and baby didn’t even get to try any yet. Also I ended up making and serving just the other thing for dinner last night and I made the couscous and scrambled eggs for lunch.

OMG, that story sounds like it could be my husband and me! He used to nap in the evening and stay up all night on the computer. He would sometimes ask me to make food such as French fries in the middle of the night. He stopped doing that, though, when I told him how annoying that was, lol, and also now he works full-time so he goes to sleep for the night at a reasonable hour instead of napping in the evening and staying up all night. I’m going to try these sweet potato fries as a side dish for dinner tonight, along with your couscous with scrambled eggs and one other thing (not on your site). Any leftovers will be used for lunch tomorrow.
